Breakfast Mushrooms with Potato

Serves 2


2 teaspoons of olive oil

1 teaspoon butter

1 potato diced (skin on)

100g button mushrooms quartered

1 clove crushed garlic

1 tablespoon chopped or dried parsley


  1. Heat a large non-stick frying pan. Add butter and oil and carefully move pan around until evenly spread over the bottom of the pan.
  2. Add potatoes and fry for 5 minutes, stirring frequently. Add mushrooms and garlic and cook for a further 3 minutes or until mushrooms are tender and potatoes are golden.
  3. Stir through parsley, season with salt and pepper.
