Tomato Gnocchi

Serves 2


2 tablespoons olive oil

1 clove crushed garlic

1 red onion diced

125g button mushrooms sliced (optional)

250g tomato pasta sauce

1/4 cup fresh parsley (chopped)

250g potato gnocchi


  1. Heat the oil in a frying pan and add onion and garlic, cooking until soft (5-10 minutes). Add mushrooms and cook, stirring, for 3 minutes or until the mushrooms are tender.
  2. Add pasta sauce, bring to the boil then reduce heat and simmer for 5 minutes. Add parsley and stir through sauce.
  3. Cook gnocchi. If you’re using a packet follow those directions, otherwise cook in boiling salted water until gnocchi floats to surface of pot. Drain well and add to sauce, gently stirring so all gnocchi is coated.
